The name points to Neapolitan pizza, which is a discipline rather than a style label. The dough is slack and long fermented, the oven runs far hotter than a conventional deck, and a pie is in and out in a couple of minutes, which is why the crust puffs and chars at the rim while the centre stays soft. Cooking that way tends to mean a kitchen built around doing a small number of things very fast, so a table of six will usually eat together rather than in waves. Downtown parking is metered on the street and structured in the lots a block behind Bernard, and both fill on summer evenings when the waterfront is busy. Walking in from a hotel or from the North End is often faster than circling for a space. Come January the same blocks are quiet enough to park almost outside the door, which is one of the underrated pleasures of a Kelowna winter. From Rutland, Glenmore or the Mission the drive in is short, though the last few blocks are always the slowest part of it.
