Pie is a fussier product than it looks. Pastry has to be handled cold and worked quickly, fillings follow whatever is coming off the farms, and the whole thing is baked in batches that are simply gone once they are gone. Shuswap Pie Company works out of 331 Alexander St, in the older downtown grid a few blocks back from the water, on the same run of street as a number of the shops and cafes that give the centre its character.
Bakeries differ in ways that matter to a customer. Some are counter operations built around takeaway, some put out tables and run coffee alongside, and some are set up to handle whole orders for a crowd. Availability shifts by the hour rather than by the day, since a morning bake can sell through well before the afternoon in a small city. If you need something particular, a certain fruit, a savoury option, or a size that will feed a table of ten, ordering ahead is the only way to be sure. The same goes for holiday weekends, when demand runs far past a normal day.
Downtown Salmon Arm rewards this kind of stop. The wharf and the waterfront paths are a short walk away, the blocks are low and easy to cross on foot, and summer brings a steady flow of people off the boats and in from the campgrounds around the lake. The weeks on either side of the annual music festival are the busiest of the year for the centre of town. Outside them the pace settles back into something quieter.
